The District of Columbia Public Schools (DCPS) Food and Nutrition Services (FNS) seeks to reenlist American University (AU) to conduct ongoing assessments of student consumption in cafeterias. The purpose of the continued business relationship aims to build upon this existing knowledge by conducting four interventions in elementary school. Those inventions include: Vegetable Taste Tests: Vegetables will be prepared two different ways and tested among the students. The winning style will be featured on the cafeteria line. Entrée Taste Tests: Similar strategy as above with the main entrée being tested. Meal of the Day Menu Board: This component will aim to better market menu items on a board to test whether highlighting menu items increases consumption. Traffic Patterns: This part of the study will analyze spaces in cafeterias to develop an optimal flow of meal service. |
